This was probably one of the first I tried when I changed my lifestyle. I was really struggling to find things that were crunchy but these hit the spot straight away. I love them for a light lunch or for nibbles with pate.
Ingredients:
1/2 cup chia seeds
1/2 cup sunflower seeds
1/2 cup sesame seeds
1/2 cup LSA
2 cloves garlic, grated
2 tsp herbs (fresh is better, parsley is always a good flavour)
1/2 tsp salt
1/2 tsp chili flakes
1 cup water
Sea Salt
Method:
Preheat oven to 160° and line a baking tray with baking paper.
In a large bowl combine all the seeds, chili flakes and LSA. In a smaller bowl whisk the remaining ingredients with the water. Add the liquid mixture to the seed mixture and stir until thickened and combined. Spread the mixture onto the oven tray using the back of a spoon to press it down to an even thickness, approx 5mm. Sprinkle with sea salt.
Place in the oven and bake for 30 mins. After 30 mins remove from the oven and using a large knife cut into even sized crackers (it should make around 20), flip them over ( I like to pull the outside ones in and swap for the inside crackers) and put them back in the oven for another 25 mins. remove from the oven and cool completely on a wire rack then store in an airtight container. Enjoy!
