I first made this thinking the leftovers will go great in lunchboxes, which was a great idea except there were NO leftovers! A delicious pork meatloaf wrapped in streaky bacon – whats not to like!
Ingredients
500 grams pork mince (approx)
1 1/2 cups grated apple
1 small onion, finely diced
1/2 tsp chilli powder
1 tsp cinnamon
1 tsp mustard powder (or can use mustard in a jar)
8 rashers of streaky bacon (its worth it)
Salt and pepper
Applesauce to serve
Method
Preheat oven to 180°. In a large bowl combine the meat, apples, onion, chilli, cinnamon, mustard and salt and pepper. Mix well. Shape the mixture into a loaf on a roasting dish covered with baking paper. Carefully wrap the loaf in the streaky bacon making sure it holds its shape.
Place in the oven and bake for 50 mins – 1 hour (I would check it at 50 mins). Turn oven to grill to crisp up the bacon top, watching carefully so it doesn’t burn (speaking from experience) and serve with applesauce.
