This is my go to when I am stuck for lunchbox ideas. We as adults hate to eat the same food over and over so I’m pretty sure kids must get sick of it to. Which is why I am constantly looking for new ideas and ways to keep it interesting. Also these take no more than 5 mins to prepare. These have also gone down a treat in the chillybin at the beach during summer instead of the heavy pastry pies.
Ingredients
6 eggs
6 rashers of streaky bacon
Salt and pepper
Cheese (optional)
Method
Preheat the oven to 200°. In a silicone muffin tray (I use a 6 hole texas muffin tray) wrap the bacon around the edge of the muffin hole. This creates the “pastry” that holds it together. Crack 1 egg per hole ( if I have an excess of eggs I like to use 2) and season with salt and pepper. Now if you are using cheese you would add that now, but dont let your imagination stop at cheese! Last time I made these I added pesto then cheese, sometimes avocado if I have it, salami would be nice, anything at all that goes well with eggs can be added here. Place in the oven and bake for approx 20-30 mins or until eggs are cooked.
