Bacon Maple Pork Tenderloin

I could eat pork 7 nights a week (and probably for lunch to) but I always seem to stick to the same cuts so it was exciting to try something new, and it was pretty damn tasty!! I served my pork filet on a bed of garlic cauli mash with some roasted brussel sprouts and steamed broc.

Indredients
1 pork loin
6 rashers of streaky bacon (preferably nitrate free)
4 tbsp pure maple syrup or raw honey
2 tbsp Dijon mustard
1/4 cup applesauce
1/2 tsp chilli powder
1/2 tsp smoked paprika
1/4 tsp cinnamon
Salt and pepper
1 tbsp Coconut oil

Method

Preheat oven to 180°. In a bowl combine the paprika, chilli, cinnamon and salt and pepper. Rub the pork loin with the spice mixture then wrap the loin in the streaky bacon. In a bowl whisk the maple syrup, applesauce and Dijon mustard. Melt the coconut oil over a medium heat in a oven proof pan and brown the sides of the pork loin. Now brush the loin generously with the maple syrup mixture and put it in the oven for around 15 mins or until it reaches your desired doneness, (I like to use a meat thermometer so I can get it just right) basting it every 5 mins or so with the maple mixture.  Once the meat is cooked the way you like it take it out of the oven and cover with tinfoil to let it rest for around 8 mins then slice and serve.
